    Beef Heel is basically a cut from the beef round right above the hindshank. The heel is made of two main muscles; those are the superficial digital flexor (the banana heel) and the gastrocnemius. The banana heel has many thick veins made of collagen and these are directly connected to the gamble cord, the cow’s Achilles heel. Heel round can be a very flavorful roast.
