    Beef Shin aka the shank is a cut of beef obtained from the lower leg of a steer. The shin is a hard-worked muscle supported by many connective tissues. This connective tissue breaks down through slow cooking in low heat. And you get moist, tender meat packed with flavour. If undercooked, your beef shank will become chewy. If you want it tender, cook it for a longer time.
