Beef tendon is low in fat, and carbs, and rich in protein. However, the protein found in the beef tendon is basically collagen. Since it does not contain all the essential amino acids in sufficient amounts, it may not be considered a sole protein source. Beef tendon is enriched with protein, low in fat, and high in calcium, phosphorus, iron, and vitamins (B1, B2). It is full of natural collagen, with low fat, and cholesterol content. Make sure you cook it long enough to make it tender and season it well.
